Bacon Cheeseburger Meatloaf Recipe

- 3 pounds ground hamburger 80/20
- 8 oz cooked bacon bits
- 2 tbls ketchup
- 2 tbls mayonnaise
- 2 tbls mustard (yellow)
- 1 medium white or yellow onion diced
- 4 eggs
- 16 oz breadcrumbs (regular or Italian)
- 8-10 oz shredded cheddar cheese (sharp)
- ½ tsp seasoned salt
- ½ tsp black pepper
Preheat oven to 350 degrees
In large bowl, break up the meat into small crumbles. Mix in onion, seasonings, ketchup, mustard, mayonnaise. Add eggs. Mix in bacon pieces. Then add bread crumbs to make mixture firmer. Mix in cheese last. Mix well. If mixture is too moist, add more breadcrumbs.
Form into a loaf in a bread pan (loaf pan) and put a drizzle of ketchup on top. Cover with aluminium foil and bake for 45 minutes. Check meatloaf (pour off grease that will accumulate during the first part of cooking into a dish –discard the drippings. Check for doneness. Replace foil and bake for another 30-45 minutes or until done.
If you want the top slightly browned, take off foil for the last few minutes of cooking.
Let rest on counter –leave in loaf pan- for 10 minutes before slicing and serving.
